A spunding valve is an adjustable pressure-relief valve used in brewing to control and maintain a set pressure inside a fermenter or keg. As yeast ferments sugar into alcohol and CO2, the valve traps this natural gas, allowing the beer to naturally carbonate without needing external gas tanks.
How It Works
• Pressure Management: You dial the valve to a specific pressure (e.g 10 to 15psi). As active fermentation creates excess gas, the valve releases only the pressure that exceeds your set limit.
• Natural Carbonation: By keeping the vessel under a controlled, gentle pressure, the CO2 is forced back into the liquid rather than escaping into the air.
• Safety: It prevents dangerous pressure build-ups that could otherwise rupture a pressurized fermenter (like a Unitank).
Why Brewers Use It
• Natural Carbonation: It eliminates the need for "force carbonating" your finished beer, saving time and CO2.
• Fresher Aromas: Because the CO2 is naturally absorbed during active fermentation, it helps retain delicate hop and yeast aromas that can sometimes be stripped away by force carbonation.
• Clean-up By Yeast: Letting the yeast naturally carbonate the beer allows it to "mop up" or reduce undesirable compounds (like diacetyl) and oxygen, resulting in a cleaner-tasting beer.
• Pressure Transfers: It is also used to safely move beer between kegs or fermenters under a closed pressure system, minimizing the beer's exposure to oxygen.
